Never chop a Beetroot up before cooking it, ruins it. Always do it whole, and with a good inch of green stuff left sticking out top. Wash it carefully too to prevent damaging the skin too much!

Personally I just stick them in the microwave for 10 minutes, in a good size bowl with a splash of water in the bottom. If you rub the skin and it comes off, it's done.

Grate pickeld ones witch a coearse grater, fry in olive oil with some garlick till slightly caramelized, season with (little) salt, pepper and balsamico, spoon on a plate and grate feta cheese (no imitation - only greek will do) over it, serve fro starters with a spicy white....

Substituting a bit of smoked haddock for the beef is also very good here. As canapes, slice the beet root in a disc and use cracker style. As a salad, the beets cubed in with fish and horseradish dressing is nice.

3lb cooked beetroot, finely diced
large onion ditto
large cooking apple ditto
12 oz sugar
2 teaspoons ginger
level tsp salt
pint red wine vinegar

lob it all in a pan and simmer 'til done.
