I made fresh chicken stock last night after a roast. I left to cool on the counter and then went to bed, forgetting about.

I froze it this morning but now I'm worried its no good. Should I bin it?

It's probably fine. If it's bad then it will taste sour and probably smell off too. You have to bring stock back to the boil every few days to stop it from souring anyway (unless you freeze it), so you could do that now if you want to be safe (and taste it when it's cooling down again).

It will be fine.
I always do this (deliberately, not the forgetting bit smile ).

Put into containers when hot.
Cool overnight to ambient.
Less work for the fridge/freezer cooling from ambient rather than hot next morning.

I leave mine overnight with the lid on (also as with chillie). No issues.

I leave food out for days.
I'll let you know if I ever get ill, with details of food type and length of maturation.
