We went to the tatton park farm shop yesterday and picked up some venison & assorted game (pigeon, rabbit etc) so I thought I'd knock together a Game Stew.

Recipe:
-Assorted game
-Potatoes
-Carrots
-Chestnut mushrooms
-Beef stock
-Red wine
-Garlic
-Flour
-S&P
-Bouquet Garni of fresh Thyme, Parsley, Bay leaf & rosemary


Step 1: Coated the meat in a little bit of seasoned flour and chucked into the casserole dish to brown
Step 2: Chopped up potatoes, carrots & mushrooms
Step 3: Added vegetables, stock, garlic, vegetables, wine, bouquet garni & a wee bit of S&P.
Step 4: Shoved it all in the oven, lid on, at 75degs.
Step 5: Theoretically, take out at about 6-7ish this evening (after the ruggers) and enjoy a delicious stew.

It's in the oven now, and I'm quite excited to see the result of cooking it at such a low temp for so long.

Flavour wise it was superb. I personally thought the meat had toughened up a little bit too much though my missus thought it was fine. The one area that didn't work - at all - was the slow cooked potatoes. They just simply didn't cook properly. I had to remove them and boil them in some of the juices to get them to soften up. Next time, I'll par-boil the pots and probably reduce the temp to 60ish so the meat doesn't firm up so much.

That said, I think with the mixed game that I used, it'd be pretty difficult to get perfect as they all cook at different speeds.

Still, it was incredibly hearty with a nice crusty cob & a decent glass of red.
