Pork curry help needed...

Hello, i have what i belived to slices of pork belly which i want to make into a curry. They are quite fatty, what would be the best way to prepare them for a curry? I am assuming roasting them on a low heat for a while before cutting into chunks would be best, but has anyone got any pointers?

Good question, though if it's belly, then slow cooking is the only way...

Roast on a rack with water in the pan below at a low (150C) temperature for a couple of hours at least, the longer and lower you do it, the better.

I can't say I'd personally then chop it up and add to a curry, but each to their own.

Plenty of things to enjoy pork in, a curry really shouldnt be one of them.

I agree Pork does not work in curries, i find Lamb to be much better

I dont do Thai.

Its not chinese and its not curry.

Its like both on the one plate and for that reason, aahhhm ooot.

I was thinking more along the lines of spicy crispy Belly pork (not a wet sauce)
So not really a curry, just a spicy dish.

Goan style hot and sour pork (a proper vindaloo) works very well if you slow cook pork neck fillet (not the tasteless tenderloin fillet cack) IMHO

Traditional Vindaloo is pork based, and quite a dry curry when prepared in it's original form...

tbh you can just fry it (ETA: after dicing, obviously) and then simmer in the sauce for half an hour, works perfectly well smile
