best oven cook chips?

Following on from my 'deep fat fryer' thread ive taken the safe option of not buying one to save my belly from further expansion. However. Having endured crappy chips for so long I'm crying enough.
we tend to get whatever budget brand of chips is available and oven cook as per norm. However, what comes out is at best bearable and at worst a mix of soggy nonsense and crispy crap.
The chips are cooked as per instruction and generally enter a hot oven from frozen for 25 minutes at 200. They are however just not that good.
I know all chips are not created equal - is there a chip that tastes good when oven cooked?

The ones I made tonight rather randomly.

Sliced baking potatoes x2
Toss in cornflour - approx level tablespoon
Leftover honey/mustard/soy dressing plus oil
LOTS of ground black pepper

Bake in oven at 200 - 230 degrees for 30 mins approx.

I always make my own oven chips / wedges, honestly doesn't take long, ensure you have a cupboard full of spices + couple of tablespoons veg oil and potatoes is all you need.

Experiment with different things (about the only thing I do religiously is use a bit of cornflour to coat as it does give a bit of a crisp coating) until you have the right taste.

Cumin, paprika, mustard powder, nutmeg even are all things you can toss in a bowl with the spuds.

We've started ignoring the cooking instructions, and do oven chips for 30mins at 240.

Use a slotted baking tray and after 20 mins give em a shake and turn them over.

Tesco Finest Chunky chips are pretty good, as are the M&S equivalent.

McCain Southern fries are quite nice as well due to the seasoning.

For french fries, asda own brand are pretty good.

I chopped up some maris pipers into wedges last night, let them sit in some cold water for 20 mins to de-starch them and then patted them dry. Then I placed them in a plastic sandwich bag with a little bit of sunflower oil, some salt and pepper and a bit of all purpose seasoning then bunged them in the oven for about 40 mins at just shy of 200 degrees. They were good....

I hope you took them out of the plastic bag before you put them in the oven laugh

Personally I don't seem to like ANY of the thicker oven chips. They just taste of nothing and the texture is strange.
The only ones I like are the french fries type oven chips. Cook them well, and just when they come out cover them in a little dab of salt and give them a toss so that the salt evenly sticks to the grease on the chips. Lovely.

If your keen on making your own rather than buying, the potato Variety you choose is significant.
My recomendation would be using some of the new peruvian strains of potato to be found in the supermarket (Names like peruvian/Mayan/Inca etc)

These on the whole are unsuitable for boiling (they will fall apart during cooking) but are exceptional steamed or roasted.

Chip some of these and lightly coat in some oil (Rape seed rather than olive) and a bit of salt, before bunging them in a hot oven, turning ½ way through

Tesco crinkle cut oven chips in the blue bag are very nice but take a lot longer to cook than the instructions say.

Buy sugar syrup and sprinkle over chips, when nearly done, with salt. Then shake.

Also cook hotter than the packet says and for longer.
