Yes - don't buy them.

Get whole mackerel instead and grill or barbecue them.

If you just have to buy the fillets, I suppose you could make a nice pate or go for the ceviche treatment..

Grill 'em and eat 'em. Nothing more is needed. Smashing.

Go well with a salad of decent sliced beef tomatoes, shallots and a mustard based dressing. Coarse sea salt over the top.

I got him to fillet them as SWMBO can't be arced with bones...

And I'd forgotten I was given HFW's Fish for Xmas, so I fried them with bay and garlic and served them with new potatoes and a tomato saladyum

Dont cook them if they are really fresh! Just cover them in lemon juice, salt and pepper, and a few of your favourite herbs and spices! (sorrel and a little chilli is my fave) and leave them in the fridge for a few hours then serve with fresh bread and a nice Sauvignon Blanc! mmmm

Try them with grilled with butter, lemon and capers

I saw this in an old Elizabeth David book - nice in summer

Make a few slashes skin side and put a bit of butter and a coupe of capers in each, squeeze some lemon and season with pepper. Similar on the inside

Grill them for a for a few minutes each side and serve with some salad, a couple of new potatoes and numerous glasses of New Zealand Sav blanc - lovely

There's a really good recipe which is in Marcus Wareing's book Nutmeg and Custard - http://www.bbc.co.uk/food/recipes/panfriedmackerel...

Bit faffy but very good. Although I do feel it needs something to accompany it, and am yet to decide what!
