Right, mrs slopes can no longer eat certain foods or drink certain fluids and finds that the foods she can eat tend to be a bit bland, so if anyone can come up with a sauce recipe we can make, i would be very gratefull. The foods and drinks she can no longer eat are listed below
tomatoes
cheese
lettuce
white wine
anything with citric acid in it
chocolate
citrus fruits
anything with vegetable fat/oil in it
no fried foods
onions of any description
carbonated drinks
I think that just about covers the lot, but if anyone suggest a sauce, then i can take a look at it. Thanks in advance

What's the reason for this as a matter of interest? Some of that sounds very odd.

Assuming that veg oil does NOT include olive oil, what about a Salsa Verdi?

1½–2 cloves of garlic, peeled
1 small handful of capers
1 small handful of gherkins pickled in sweet vinegar
6 anchovy fillets
2 large handfuls of flat-leaf parsley, leaves picked
1 bunch of fresh basil, leaves picked
1 handful of fresh mint, leaves picked
1 tablespoon Dijon mustard
3 tablespoons red wine vinegar
8 tablespoons good extra virgin olive oil
sea salt and freshly ground black pepper

Chop and blitz everything bar the olive oil, which you then add in slowly like making a mayonaisse, until it reaches a nice thick creamy consistancy.
Good with pretty much anything, but especially fish, red meat and game.

From what i can understand, she suffers from a silent reflux/pepsin thingymajig, and these are the foods/drinks which cause the most grief. I am sure i have left out quite a bit, in fact thinking about it, she cant drink lager or cider, she cant eat pastry of any kind, crisps unless they are vegetable ones and oven cooked not fried are out. So as you can see,the poor women cant eat much anymmore, and despite my ability in the kitchen(which is minimal) i cant think of any sauces to make her to enable her to eat food that isnt bland, after all plain grilled chicken can get tiresome after a while.

I would have to check the mustard and the vinegar for citric acid, but sounds good, i'll mention it to her and see what she thinks. Oh, and before anyone mentions mayonaise, she cant have that neither

Actually, thinking about it, there's loads you can still do:
Assuming butter or olive oil are OK, then you can do pretty much any emulsion sauce - Aioli, hollandaise etc. Not sure if wine wine extends to white wine vinegar, but if not then there are Beurre blanc and various flavoured iterations thereof.

Nothing much there excluding white sauces either (i.e. stuff based on a roux made with flour and butter, then thinned with milk).

Brown sauces (stock reduced to a demi-glase, then thinned with wine/infusions should be OK too.

Sadly, butter is off the menu too, and i would have to check that olive oil is okay. God damn woman has to be bloody akwardrolleyes

Out of interest, why do you make reference to 'plain grilled chicken'? Does Mrs Slopes have an aversion to other meats or fish too?
There are plenty of (easy) marinades or rubs you can use to make any meat/fish more interesting, but the list of "Can't eat" seems to be growing.

How about 'fruity' sauces like apple sauce, redcurrant jelly etc? Or soy sauce?

The main reason i made reference to plain grilled chicken, is that most of the mrinades and sauces available in the supermarkets includes citric acid, which she cant have. Yes mrs slopes does eat other foods, like fish and red meats, but sometimes she would like some extra flavour to add to the food. The reason why the cant eat list keeps growing, is due to me remembering stuff as i go alongsmile And mobilechicane, unfortunately apple sauces are out, as its a citrus fruit, and therefore contains citric acid, even if it is naturally occuring, she still isnt allowed it.


The mayo is out due to the oil, although IIRC it has vegetable fat/citric acid in it, and she can only have, i think, dark soy sauce, light soy sauce is a no-no due to spirit vinegar. I think i should have added to my original post that this wasnt going to be easy

Have a look at the herbs and spices section in the supermarket. I'm sure I've seen herb / salt / spice blends that you'd grind over eg. pasta once cooked. Maybe something like that could help?

We have already tried that route, and found mixed dry herbs are the only thing she can have, and although she does like them, just wants a little more variety. As i said, damn woman has to be bloody awkward. Thanks for all the suggestions so far, any more suggestions will be greatly appreciated

Fair point, i did state vegetable fat, but i think i should have said any fat not just vegetable fat. I will now go and hang my head in shamepaperbag TBH its probably easier to say what she can eat, rather than what she cant eat, so here is a list(what i can remember at the moment) of what she can eat and drink
red wine
chicken
beef
lamb
pork
vegetables
potatoes
tuna but not tuna mayo(she has resorted to putting natural yoghurt in it to make it a mayo like substance
fish
bitters and real ales
eggs
milk
non citrus fruits - strawberries,blueberries,cranberries

Thats all i can think of for now

Recipe 8 on this site is for Alfredo sauce
and Recipe 10 is for a low acid tomato sauce which might be worth a try...

Thanks for that, not sure how she will manage with not being allowed tomatoes or cheese, but there are some things there she can have a go at, so thanks once again. I guess i need to spend more time on google, and less time on PH

No disrespect, but that list seems awfully contradictory - has she seen a dietician or nutritionist? Was the list derived as part of an exclusion diet? No mayo, but can eat eggs etc. No white wine, but can drink red...

Not having a pop, but I've got friends who are both Coeliac, Lactose intolerant and one who has Crohn's Disease, so am used to cooking for alternative dietary requirements...

Not having a pop, but I've got friends who are both Coeliac, Lactose intolerant and one who has Crohn's Disease, so am used to cooking for alternative dietary requirements...
No, she was having all the symptoms of acid reflux, but the docs couldnt find any sign of it when doing their test, so she was sent to a speech therapist for a swallowing test, and after pointing out what she ate and drank, thats when this pepsin/silent reflux came up. The food exclusions are what she was advised to avoid to ease the problem, and she is due to visit a dietician sometime in september(thats how long she has to wait for an appointment) and hopefully she will find out then any alternatives. As to the eggs and mayo thing, as i said before i think its down to the fat content in mayo, as she can quite happily have scrambled eggs or poached eggs, but not fried, and white wine has a high citric acid content which leads to her belching a lot, as do most of the things she cant have. Your right it does seem contradictory, but thats what she has been advised, and i didnt for one minute think you were having a popsmile
