How to make Noodles like the Chinese takeaway

For time i have been trying to get noodles like the takeaway.

Ive tried soaking before cooking
Cooking then rinsing in cold water before frying
various sauces and liquids

But they are either bland or just plain rank.

PLEASE HELP.
