I must be getting old. I am starting to get really annoyed with the quality of tinned coconut milk these days. The full fat stuff may as well be light as it’s more often than not really watery. I have tried all the main brands and they are all crap. Anyone got a recommendation for a decent one? Starting to think I should go back to the solid block stuff.

Yeah for recipes where it would work like in a curry but you can’t cook say rice n peas or bake with coconut cream because the fat content is too high and it doesn’t work properly.

I’m experiencing full fat coconut milk that, if it wasn’t labelled, I would assume was light coconut milk. So I’m kinda stuck with some dishes where milk is too thin and watery and cream too fatty. Hmm

I used to use the solid block creamed coconut for years but couldn’t get it when I moved abroad so switched back to tins. I think I’ll go back to the solid

I’m not so sure it’s all about ultimate level of extract. It can get too high and cause problems when using it for anything other than throwing it in a Thai or Indian curry and even then too much fat starts to make it taste a bit odd. 70% is probably about right which is why the Aroy D works well

I think fat content is different to extract content. Both Freshona and Aroy D have around 20% fat content.
But surely the higher the extract content the higher the fat. The only other ingredients are water and guar gum
