Coq Au Vin?

So I have been roped into cooking a meal tonight for 8 people. The gf's mum was going to make Coq au vin, but I felt obliged to takeover this task when it became apparent that she didn't realise it had wine in it. On further questioning it turned out she didn't even know what it was and she wasn't going to use a recipe.

Anyway I said I would do it.

It has now become apparent that one of the people coming for dinner has a severe onion allergy. No chives, leeks, scallions etc either, however garlic is ok.

So the question is what could I use as a replacement for onion? My thoughts were Celery or Peppers. Any other suggestions as at the moment it's sounding a bit crap.

Unfortunately it's a very severe allergy so no onions at all. Not even onion powder... So cooking with them is just a no go.

They normally use cellary as a substitute. However I can't see it tasting too good.
