But I haven't downloaded any songs, all I can do is shuffle play on my phone, I don't know what that is - has my phone downloaded all the songs on my playlist to my phone so that whenever I use the phone app it is already in my phone, or am I accessing it via internet every time I shuffle play?

Turn all your data connections off, then test to see if you can still play music.

I thought you were referring to what happened if you upgraded.
Data question was answered in an earlier post - some songs remain in cache.
