While I always try to avoid driving through puddles when possible, these last few days have made it impossible.
My 04 Shogun runs on 265 X 75 X 16 AT tyres and I'm staggered by how much water is thrown over the windscreen, even at modest speeds. I don't recall this issue with anything else I've driven
Is this something peculiar to the Shogun,or is it true of all 4x4s?

I'm pleased to hear it's not just my car that does this.
Would after market arch extensions or Paris Dakar style mudflaps go anyway to solving this, or would they just make me look like a complete tit ?

It is the water being displaced and thrown forwards that is the issue. Think when you slap your hand on water with you fingers pointing away from you, the water will go up and away from you too. Same happens when the tyre impacts the water. The larger gap between the road and front body work is what allows the water to get high enough to come over the bonnet and onto the screen as you drive forwards into the hanging water.
That's a great explanation.
Looks like I'd need something dangling in front of the wheel rather than behind it.
