There is a great TV critic in the US called Alan Sepinwall. http://www.hitfix.com/whats-alan-watching
He wrote a book called The Revolution Was Televised about just how fricking fantastic TV has become.
Each chapter explores the history behind the creation of a different great show.

I think this is a very good starter list. Although I never watched Buffy. (Alan is an admitted Whedon acolyte so you can perhaps forgive him that one.)
His blog is so widely read in the industry that the showrunners/producers often contribute in the comments or even on their own blogs to try to explain any criticisms he has.
Reading his episode recaps on say Fargo really added to the experience, IMHO.

Probably only in hindsight compared to the others. I recently rewatched a few seasons of The Shield as it had been added to Netflix and it's a lot better than I remembered and I loved it then. Battlestar Galactica. For me there's not been much on before or since that was as good. If you get the box-set, make sure you get the pilot episode (3 hour epic) as it sets the scene properly. If you jump right in to Ep1 Season1, you'll be immediately confused a bit.

Top tips.
The Shield first ep (pilot) is crap.. don't let it put you off. Gets better and better throughout. Goggins!
The Wire takes a while to get into... (and understand the accents) stick with it if you can.
Dexter falls apart towards the end, there is a very nice end series 4. Stop there unless you feel you have to.
True Detective is fab, but you need to slow down to watch it. Very rewarding if you can.
West Wing & The Newsroom are different to all the above - one needs to suspend ones views of things USA (if, like most, you have them) and get into the dazzling writing by Aaron Sorkin

Yes the form of the medical diagnosis was usually quite predictable, but I love House's character and how he dealt with the season long plots, rather than each week’s medical quandary. Although plenty of the episodes had great (if far fetched) stories. As for lupus, I once saw a man wearing a t-shirt which just said “It’s Not Lupus” on it
