I watch a fair few channels as mentioned above plus a few which haven’t.
Visioracer: His channel focuses on anything car and engine related. Pretty interesting and informative.
Autorodeo Nederland: European Banger Racing, some proper brutal smashes.
Motorsport Moments: Compilation videos covering pretty much anything to do with Aussie V8 supercars from crashes to close overtakes.

I've subscribed to Harry M's Garage as it's so eclectic with regard to the cars in it, and what he does with them. The RR to the Arctic was epic.
Others that pop up on my feed include:

I also managed to track down a channel which has archived pretty much all of Best Motoring!

Doug De Muro I can take or leave. I did enjoy his reviews of a 1970's Eldorado and VW Phaeton, though.

Both of the above like to point out weird quirky things about the cars which I like. Plus they review a lot of older cars
Jay Leno has an interesting mix of hypercars and classics with a historic slant
Smoking Tire and Chris Harris (both are a a bit "Clarkson poweeeer") but are engaging - quite Porsche/AMG/M/RS focused
Rebecca Jackson / carbuyer not necessarily for noble reasons!
Not a fan of Shmee, Vehicle Virgins or the other supercar type videos

It's not been mentioned yet but MudNomad is well worth a watch for the early videos. Bit lifestyle-y but in a good way as the lifestyle involves touring around Europe for 1000's of miles in an Ariel Nomad. Later videos perhaps for the fans only and more of a travel vlog.

Much more to come - this summer we're taking the Nomad to Ireland, Isle of Man, Alps, Spain and Portugal and I've just done first 1000 miles of a massive roadtrip from Florida to Alaska in a supercharged Ford Raptor

+1 for MudNomad! You're right about needed to start right back at the beginning thought. Art and Ruta are just great to watch. Always surprised when I see how little followers they've got on their vids.Otispunkmeyer said:

I second Mat Watson, amazing chap, have watched him since a long time ago when he used to do CarBuyer videos, and now he does Carwow instead, but has much more freedom to do better content. Great drag races from him as well.
I haven't even mentioned Mastermilo, can't even believe that. Astonishing chap and does some absolutely crazy stuff, such as RollGolf, replacing brake fluid with water, which fuels work if you can't get petrol, shifting into reverse at 70mph, he even tried to drive the Mr. Bean way. Great content, not to be missed, English subtitles on all videos.
Tavarish is great, i'm really enjoying his content about his cheap, ex 'Fast And The Furious' Murcielago.
Harrys Garage is also very good.
Shmee review's really interesting cars and his garage is amazing but I cannot stand his presenting style and find him incredibly irritating, to the point where I am unable to watch any of his video's. Shame.
