For me the most satisfying fight scenes are when the person on screen might not look anything special and is completely underestimated by his opponents, but you know he is more than capable of taking down every one of them with his bare hands.

One thing Cruise did well in the film was to still look menacing, despite his stature.

There are a couple of things when we talk about good screen fights.
Entertaining or realistic sometimes they can be both.
Kung fu films like IP man are entertaining but completely utter s

Well, if we're going old school...
The final 10 mins of Sharpe's Sword where [spoiler alert!] the slippery Sir Henry Simmerson gets served his just desserts by Father Curtis as he tries to defile the beautiful Emily Mortimer.
Meanwhile our hero, weakened from a near death experience (nursed by the beautiful Emily Mortimer), storms the fort, is confronted by the treacherous and cowardly Leroux who he literally calls 'Outside Now!' whilst a private holds a Union Jack behind him as a back drop, takes his jacket off, rolls up his sleeves and fights a one on one duel, defeats his foe, falls into the arms of the beautiful Emily Mortimer and is best man at his mate's shotgun wedding.

Atomic Blonde had a good one as well. Most of the time when they put women in action films, they make the mistake of having her almost invincible, taking out much larger opponents with ease. But in this instance she takes a fair few hits in return, which coupled with the clumsy and desperate fighting making it feel a lot more believable
this is such a good point, I'm happy to watch hardass gritty realism and I'm happy to see some artistic license stylism, but when you have the hollywood signature petite pretty thing laying power shots destroying 200lb+ meat heads it gets a bit gimme a break. A great fight is a joy to watch; the ones that always come to mind with this regards are;
Hot Rod and Childs from the Thing in They LIve for it's length and moves
Bond and Grant in from Russia With Love, just perfect real feel
the cop and the mma fighter from banshee, for it's viciousness
Serendity, Mal and the assassin for it's real consequences (rare in fights)
Jack Reacher and the paid off goons, really top notch choreography and again, that real feel.
Aside from them thanks for the reminders for ;
the Quiet Man
Pale Rider, hickory
cannonball run
Deadwood had a brutal one between Dan Dority and the Captain
I'll also add, though I cannot recall, there must be one from the long kiss goodnight?
But the sowrd fight from The princess bride and the lightsabre fight between Vader and Obi Wan from Star Wars (it was based on kendo and is fairly stiff.)
I also like Oddjob and BOnd from Goldfinger even though it's an unbeatable hench against a ragdoll, so less interesting....which reminds me, the russian assassin against the random mi7 bod at the start of The Living Daylights is good too.
