The Bastakiya part of town is quite nice to have a wander around and I'm told that the museum housed in the main fort is actually pretty good.You can then get a river taxi for peanuts and go to the other side and have a mooch around the gold souk.
Might be a bit warm during the day and they place comes alive in the evenings.
there's also the jebel ali international shooting club. has just been refurbished and the ranges updated, owned by that sheikh who won gold at the olympics. few beers and a shotgun, has to be a good day out.

There is a decent wee go kart track outside the Jebel Ali Hotel. We used to sneak the work van, and whizz out of the port and go for a race! http://www.jebelali-international.com/properties/j...

I did the museum many years ago and its worth doing once. The historic gold souk, spice souk etc closes for lunch (which seems to start later and last longer than you might expect) but it is interesting to wander around, as long as you can accept every trader trying to pursuade your money in their shop.
