I have Laguna Seca pencilled in, presumably the track will be closed to the general public, apart from watching whatever's running on the day is there anything to do whilst you're there?
That depends on howe flukey you are... I just watched the skidpan, single seaters, bike day and driver training.
I believe that there was a PHer went just after me who blagged a lap or 2 with a Mazda professional driver around the track.

I was there on a (supposedly busy) race day. Had to pay to get in as it's a State Park (or National Park? I forget) but there was no entry fee to the grandstands, and I saw some good racing. No merchandise stands open at all, and the only place to get a drink was in the paddock, which we were not allowed in.

Oh, and don't make the mistake I made of trying to drive to the car park at the top of the corkscrew in a massive, rwd, automatic car. I was very lucky not to get irretrievably stuck.
