Manhattan hotel recommendations

We went just before Xmas and stayed at Le Parker Meridien in Midtown West. I think we got a good deal relative to NYC prices and I loved the location. There were a couple of good Delis close by which were good for breakfast; the hotel itself had a nice breakfast place (highly rated on Trip Advisor), but it was quite expensive (~$90 for 2 IIRC). It also had a quirky little burger place just inside the lobby which is very popular ($35 for 2). We tried both once and enjoyed them.
The hotel itself is a couple of blocks from Central Park, a few blocks from 5th Avenue and it's right next to the 7th Avenue Express subway line which connects into Times Square and from there you can get to most places. From the hotel we walked to Central Park, 5th Avenue, Times Square and we walked back from the Rockerfeller Center late one night. The room was also a decent size which was a plus for NY as well, but the view consisted of someone's office windows about 30ft away.
I don't usually have strong opinions on hotels; as long at they're clean and there's a shower then I'm happy, but the next time I go back to NY I'll try and stay there again.

The Gansevoort and the Standard Hotel? Both in great locations down at the bottom end of the island. The former has a good pool area up top.
Midtown I would look at the Royalton and right across the street at the Sofitel.
Don't forget when factoring in pricing that room tax in NYC is monsterous and can add about 25% to your bill.

Our trip included San Fran and Vegas and as we travelled West the rooms got bigger, and cheaper

That is a really nice hotel but a bit of a trek (relatively) to the mid-town type attractions. I quite liked the Michaelangelo which is just off Times Square, a bit old fashioned but good location and rarely for NY big rooms. Literally got back from NYC this morning and it depends how you want to go really. My personal favourite hotel in the world is the Intercontinental Times Square. My dad is a platinum IHG member so helped me out with an amazing deal on a suite there. Could see the Chrysler building from my bed! However there is also the frugal option, in the form of the Holiday Inn Express. A lot lower market however the rooms are clean, staff are nice and the shower is hot. It also helps that it is cheap as fook.
A couple of recommendations I would make also are. No.1; Never eat in the Hotel. There are always amazing independent places nearby and it helps that this is the city that never sleeps. Also, take the subway. Quicker than a taxi and it has air conditioning which is really novel compared to the tube.
Also, where are you flying in to? JFK is good, and has many amenities(BAs First experience from there is the best travel experience I have had), but I like flying into Newark. Then you can get the train into Penn Station, which is pretty much in the middle of everywhere you could want to be. I'd be Guessing you're flying KLM from Schipol.
And Finally, a couple of recommendations for you while you're there. A great breakfast can be had for a good price at the Europan Cafe, and Another excellent place to go if you're near the Financial district is The Fraunces Tavern. They do an Excellent Chicken Pot Pie, and the Best Reuben sandwich I've had in the city. Also their Porterhouse Stout Ale is like Guinness, but about 8x better (if that's what you're into)
