Orlando - Miami and back in a day? Or where else to go?

Finally got my itinerary for a business trip to USA today, and I'm being dropped at Orlando airport hotel at 10am Saturday, and my flight out is on the Sunday at 6pm, so guess I need to be at the airport at 4pm.
So, 10am Sat till 4pm Sun free, free hotel Sat night at Orlando Airport. What to do?
I've always fancied visiting Miami, which is an hour's flight away. Reckon I could get there and back in a day and still have a useful amount of time to sight see? Or will I waste most of the day in airports?
And if not that then what else is there to do?
Am fairly new to this international travelling malarkey, so all suggestions gratefully received.

There is very little to see or do in Daytona Beach apart from (pretty dull, in reality) tour of the Speedway, which is a bit like an abandoned airfield when there's nothing going on, on-track and the 'Daytona 500 Experience' - most of which is static car displays and an IMAX movie. Other than that, The Iron Horse Saloon and Lollipops tit bar are the only places worth a visit.
In your shoes, I'd rent the car in Cocoa, rather than be ferried over to OIA and head to Kennedy Space Center first. Spend Saturday night at your airport hotel (is it the Hyatt, actually on the airport, or somewhere else?) There is a very good authentic FL smokehouse/bar close to MCO called The Fish on Fire that has great live music, excellent food and hot bar staff, that is worth a visit.
Then on Sunday morning you've got pretty much the whole day to do the airboat thing you hinted at earlier - which is a lot of fun with the right 'pilot' and head to one of the gun ranges in this area. I recommend Oak Ridge Gun Range, on S. Orange Ave, but there are several others.
Finally drop the car at OIA and head home - but don't forget, the security lines at the airport get scary-big on Sunday evenings, so two hours pre-flight should be the absolute minimum - and if you do go to the range, make sure you wash your hands thoroughly before going through airport security.

Did the air boat thing yesterday as a surprise part of the business trip, which was nice. Saw a couple of aligators, big buggers!
