Finding a late January Bargain?

Morning Folks.
Me and the other half have been planning on taking a holiday in January, instead of booking in advance we have simply booked a period off work and are waiting to grab a last minute bargain (If such a thing exists).
Our essentials are:
I want to spend between £500-£1,200 per person and I am looking for maximum "bang for buck", therefore I would appreciate any suggestions and places to look for such deals

- Location: literally anywhere in the world (although Ideally I would prefer to avoid Arab countries)
- Duration: 7-14 Nights
- Board Basis: Any
- Departure Airport: South West, South, London, Midlands, Manchester etc.
