Just did a bit of research, and it didn’t take long to find the answer. Apparently, this is a basic mod you can expect to find on stunt bikes – an additional rear brake lever mounted to the left h/bar.

It's simply what you're used to. In reality, your fingers are way more sensitive than your foot, and can modulate pressure way more effectively. Must be a new thing as I have never seen that, and I used to live there right next to the pit lane.
Some teams may use them but I am not aware of any seniors that do it.

As an example, try driving a car with a bike engine that has a clutch designed for finger operation. Most folks stall constantly because they can't modulate it as well with their foot.
