Think it's more to do with the brain and going into spakka mode that set's it off.

Actually, no, I get this, do you feel the taste of say, an orange, the bitter taste, just before puting it in your mouth? I think it's just sub-conciousness, that you're expecting the bittery taste.

It means there might be something a bit wonky with the joint that attaches your lower jaw to your skull.

I get that too with sour things sometimes, like the muscles moving my lower jaw temporarily contract and hold my jaw in place. Not particularly painful and goes away quickly. The TMD description didn't really strike a chord with me though.

Salt and vinegar crisps in particular set mine off, but I get it with quite a few different things, I would say I normally get it after not eating for a while?
