Recommend me a (max) £3000 cabriolet

As a father of a four year old who 'likes a car with no roof' I can tell you that they hate them in reality. I can just about make it to the local shop before they demand the roof goes back on. Sorry to be a killjoy. I still have two convertibles though, just use it as an excuse to get one. But don't expect to drive them round in the back very far...
I would look at saabs and bwms for 4 seater cabs, load around for under £4k.
As it is replacing a 4 motion I guess you like some creature comforts over the last 10/10s so these should fit the bill.

Fun, good residuals, tax exempt
Fun, also good residuals and 4.0 is pretty fast too
T-Top, so open roof and a coupe all in one
Over budget, this is up at £5k, although I bet you could buy it for £4.5 if you wanted to up your budget. A proper 4 seater and personally I love the way they look.
A bit of classic Mustang, this is a 5.0 V8 and manual too. Up for only £2250

I was just about to suggest a 306 cabriolet. I'd go for one that had the original wheels on but they are very pretty pieces of kit indeed. I am possibly a little biased having grown up with my mum having 4 of them.

The Land Rover is acceptable but so far left field it's in a different dimension, the Mustang is a cracking concept but that particular one is far too Vanilla Ice "rollin in my 5 Point 0" lol
The corvette is a excellent shout and is your saving grace as the Wrangler screams "Queer as folk", the Chrysler , I wouldn't describe that as something that has been designed at all, the person who penned that really should be shot.
My money is very much on a E36 cab as your budget will get you a fantastic example of a 323/325/328 with well under 100k and probably even a hard top to.
OR
A volvo C70 cabriolet is quite a nice place to be and you can get a 5 cylinder turbo

Whilst leather seats are lovely in most situations in the UK - ie when it's cold and/or raining - I wouldn't have them in a convertible (again).
The sun will make the leather very hot and it's not nice on the arms or backs of your legs when you get in to drive. It also makes you feel a bit sweaty and, er, that's gross.
The Mx5 I had was superb, it had fabric sports seats. Girlfriend once stripped down to her bikini in the passenger seat which was somewhat distracting.
