My ex once vomited in one of my old jags on new years eve. I was out there with a bucket and sponge as the clocks struck 12.

But, the smell hung around for months afterwards. Eventually I took all the carpets out and found, under the underlay sound proofing, that "something" had started evolving in the damp, dark, puke ridden environment there. hurl

But after another good wash and generous application of anti bacterial cleaner it never made a comeback. smile

This is the kind of thing that keeps me awake at night now that our first is 'on the way'...or specifically how to protect the interior. I'm thinking some sort of airtight cocoon around the child.smile
Dont let them eat rich/greasy stuff before a journey, use pressure point type wrist bands (they really work), and get a car with firm suspension, the much maligned Audi A6 Sline suspension is ideal, kids never feel ill in my car but always feel in in the Mrs car which has limo like ride
Or have kids who can eat or drink any old st and not get sick...my parents did and my brothers and i never threw up in the car. ( i grant you the very real threat of being left at the roadside in the middle of africa if we did barf probably helped)

Clean up with anti-bacterial spray (Flash or similar) then as mentioned above rub baking soda into area and vacuum.
Leave to dry then cloth with neat vodka to remove lingering stain (told this by friend with his own valeting business-something to do with ph content of vodka to neutralize stomach acid).

Was a taxi-driver for years-well rehearsed in cleaning vomit.

I threw up the other day down the side of my mates 964 whilst co-steering, the whole rear side. He was travelling at a considerable speed and didn't slow down. Thank god I didn't have the harness on.
