What do you do with your "unsellable" cars?

Nothing wrong with that IMHO. Sometimes as a seller that's exactly what you want.Another reason to use these places to when you know your car is about to go bang but it's not really obvious - but even then you're just insulating yourself from an angry buyer with zero recourse against you - and you're paying for that.
In other news - the 'too many owners' thing is like the 'over 100K' thing, it only scares-off people who know nowt about cars - the same people who'll quibble that the plate isn't special or the tyres aren't blacked.
A lot of owners in a short period can be a warning of niggly or annoying issues of course - but < 1-owner-per-year is no issue on any car - always bearing-in-mind that dealers often didn't re-register cars so the actual number could be WAY higher anyway!
I'm actually just-as-way as cars with few owners - because if one of the few was a cheapskate or abusive, that car has taken more of a beating...

If it was an overpriced dog with patchy history and no warranty I would take your point.

Had a guy from the arse end of the country contact me to buy my Astravan because he'd seen a pic of it on here from like a year ago and it's in a rare colour which he wants. Many emails back and forth telling him absolutely everything he wanted to know about it and more and he was still keen for it. Went and got it detailed to look its best and sent him up to date pics. It's 5 year old, has done 107k and has been used as a van, but the bodywork is excellent as it's been well looked after. After seeing the pics he comes back to me with "nah, I think I'll leave it because the plastic bootliner has too many scratches on it and it's done too many miles" - I kid you not - on a van, with 107k . He then sent me another email wanting to know why I'd not replied to this. I had this recently with my old fiesta finesse. It was on gumtree for 2 weeks and had many views. The car had the abs light on, wasn't in the best of condition but did have a full service history. It ended up selling for £700 and I felt like I had won a watch. The buyer didn't care about the condition or light as long as it ran well.
Put your car on gumtree and I'm sure someone will come out the bushes. A lot of people buying a car at that price only really care about how it is mechanically. Spend £20 at your local scrappy and buy the parts it requires.
