Really cool idea. For cars, the Mazda 787B, Mclaren F1 LM, Sauber C9/C11. Possibly some NASCAR stuff if you're into that? the Richard Petty 43 Plymouth Superbird is an awesome looking machine.
A few bike suggestions...
Not MotoGP, but from the golden era of Superbike racing...the Honda VTR1000 ridden by Colin Edwards. In my opinion, one of the best looking racing motorcycles of the modern era. I've got a signed picture by the man himself on this bike...good memories!
I don't know if this one is neccesarily iconic, but it's always stood out as being one of my favourites. The 2001 West Honda Pons Racing NSR 500, the equivalent of the West McLaren Mercedes cars...
And one of my all time favourites, the 2006 Camel Honda ridden by Valentino Rossi and Colin Edwards.
