Derek Hatton in a metallic red XJS reg "DEG5Y" back in the early '90s.
Once overtook Bernard Manning on the M62 had a blue Silver Shadow with "1 LAF" reg.
Coming back from the I.O.W a couple of years ago somewhere in Hampshire got overtaken by a black 300C with the reg "CUE 130y" made to look like CUE BOY.
I presume it is a snookerist but no idea who.

David Wheater, ex Middlesbrough footballer, now plays for Bolton, driving his BMW M3 (he cut me up in it) now has a Ferrari 599 I think. He used to live near me so saw it a lot.
Judge Jules (DJ) opened the door of his Audi Q7 onto my Golf while I was sat in it, sure the reg was something like MU51CDJ. This was after a gig.

It was either Anthony Reid or David Leslie, I *think* Reid, was blasting through Edingburgh on the ring road after the Knockhill BTCC in an R33 Skyline GTR, I was only a young 'un at the time but he was not hanging about, this was the days before Gran Turismo and Jap turbo stuff being cool!

Rowan Atkinson. Impeccable taste in cars! Nattered away to his missus about cars for ages before I twigged who they were (she was driving the D-Type, he was in the E-Type). Nice people.

Sadly I havent seen any myself bar racing drivers leaving circuits after races but they dont count.
My Dad, being a keen Watford supporter was on his way home from Vicarage Road back in the 70's when his car broke down (not an uncommon occurence) After a short while a limo of some sort pulled in behind and the chauffer got out and dashed into the nearby KFC. Guessing who might be inside, my Dad knocked on the window of the limo to find Elton John and Billie Jean King sat in the back. They kindly signed the back of his chequebook, with Billie Jean King signing it "keep Smiling" as I'd imagine my Dad looked somewhat frazzled.
They didnt stop to help though, Feckers.
