If we're allowing buses & trucks, I give you the Gardner 5LXCT fitted to some Leyland buses (er, 1 from new, aftermarket on some more apparently). Can't find exact capacity, but the 5LW was 7 litres, so probably the same block but with a turbo fitted.Smallest - Audi 100 1.9 litre

How about a 500cc pseudo-V8 in the Honda NR500:
"Honda designed a 32 valve V8 with four pairs of linked combustion chambers. This then evolved into an innovative engine with four oval-shaped cylinders. The oval cylinders allowed room for 32 valves and eight spark plugs, the same as that of an eight-cylinder engine while staying within the four cylinder racing rules limit of the time".

The smallest true V8 I can think of is the Morbidelli which was 847cc. Few built, but didn't quite make production.
Largest 4 cylinder I can think of was the Lancia Gamma which was 2.5L.
Laverda built a few 996cc V6 race bikes and kept threatening to put them into production.
