The dealer will know the registration number at the time the dealer registers the car. Most have a block allocation of numbers abd use them sequentially. The should be able to give you a build date, and a date of arrival at the dealership.
What type of car and any extras? If you ordered extras (factory fit) then they should be very precise with dates, it is being 'built for you', if just a bog-standard car then it should be quick, and cold come from stock in the UK.

The dealer should be able to give you a registration number by now (the dealer has the system that generates it and can only register it on that number at his dealership).
It is usually registered on the day you collect it or the day before - he cannot do that without an insurance certificate in your name with the correct reg' number on!!!

I thought dealers were allocated a build slot by the manufacturer and by default an associated chassis number that was linked to that build slot. They can see where their build slots are on the manufacturers system at any time and once the completed car has rolled off the production line they know within a couple of days when the car will be with them. At this point they should contact you with a choice of reg numbers they have from the list they have bought from the DVLA. The car is then registered in your name and the V5 document arrives at your house in due course.
