Had the pleasure of driving a friend's newly acquired (Jan 2007) 3.2 CS round Oulton Park a week last Saturday (20th). It's apparently completely standard and was an absolute gem - easy to drive, fantastic manners and phenomenal grip (SO-2s). Besides my race car (class 2 SC) it's the nicest 911 I've driven round a track, but likewise you could use it on the road easily for the purposes you want. Although whoever's in the passenger seat will have to remember a cap on sunny days (no sunvisor to save weight)!
I would imagine it's one of the most reliable and cheapest to maintain of those cars mentioned too. The owner bought it for similar reasons that you're using to help choose (likewise the 993RS he got late last year too), although since a "hot-ride" round OP in my car in November he's now hooked on driving on track with it (and very good he was too for a first go) - so be warned, you will be tempted!
