My 987.2 has all 3 of these (was an ex-demonstrator). Thoughts
PASM - Really grew on me as have started to appreciate just how well it damps the road although I never use the hard setting. That said I think non-PASM rides fine too but PASM does add an extra 10%.
SportsChrono - I use this the least by far. You get the Sport button as standard with the 981. If I was buying I would spec only if I was going with PDK too (which I personally wouldn't but I know many people see PDK as essential)
PSE - Potentially the most gimmicky but I leave it on all the time. Does sound great.
I don't think any are essential (other than SC with PDK) but all are good. If PDK then I would put SC first, otherwise last. If you asked me on day 1 of ownership I would have put PSE ahead of PASM but nowadays I think I would reverse those two in order of preference.

CLIMATE
Another one without climate. Still struggling to get my head around a £50k car where you have to keep adjusting the fan speed and temp. Guess if the car always has the roof down then its not too much of an issue. Mine will be a daily driver and during the winter the roof will be up. In the cayman where I had the std manual air con it was a PITA. Most cars for sale at OPC's have climate.
PASM
Who knows how well the 20" wheels will ride on UK roads without PASM. Bit of a risk not to spec, but I'm not at the moment.
SC
If the car was a manual I wouldnt bother. Had it on my Spyder and didnt really use it. On my PDK Cayman without SC I wish I had it.
AGATE GREY
Couple of people have said it looks a little brown in certain light. Putting me off a little, but hope to see a 911 in that colour soon.

Hadnt realised climate wasn't std!!!! Thanks for the heads up. I assumed option was just for dual not dual/climate. Will spec
Why is SC so important with PDK?
Saw 991 at dealer in agates he grey and like it
Was going to go gt silver but saw RS60 at dealer and it didn't look much different to normal silver

I think the fact that it says dual had confused others, you're not alone. You can see in the photo below that the std aircon has no temp display and no auto button. Not a cheap option though
It is the photos that I studied to see what you were saying then read the text! Can't believe not std
Dangerous not to spec I think
I did ask dealer if I was missin anything else-he didn't mention this!!!
AGATE GREY - I WAS HUMMING AND ARRING on this colour as my choice but just been down to Sign off my spec and saw the colour against GT Silver and Standard Siver etc - It will look awesome - with Silver and black you tend to lose the line details - I was tending to lean towards the silver as it is shown a lot in literature videos etc but definitely opted now for Agate grey. It is a warm looking Grey but definetely does not look brown in natural light as the cars were all outside ready to go to customers.

Based on 987 experience PDK gearchange can feel quite sluggish without sports of sports+ button pressed. To be clear on the 987 neither button came as standard, you got both by speccing SC and each one added an incremenral level of speed to the change. With the 981 you get the sport button anyway so PERHAPS less critical to spec the SC just so you get the Sports+ button. Hard one to call that. With PDK I would also strongly consider the Sport wheel that comes with the paddles as changing gears with the rocker switches isn't so great (try this for yourself on existing models at your OPC).
Decisions, decisions!

Ok thanks. Really struggling to see the point in SC at minute (£1300!)With PDK I would also strongly consider the Sport wheel that comes with the paddles as changing gears with the rocker switches isn't so great (try this for yourself on existing models at your OPC).

Will have sports wheel with paddles as that is what I am used to

From a resale point of view people will always look for SC with the PDK box. You will get even faster shifts, launch control, throttle blips, dynamic engine mounts and a G-Force meter on PCM Will have sports wheel with paddles as that is what I am used to
Keen drivers after a PDK Boxster S will want SC. I think if the car was a 2.7 you could live without it. I have it in my spec - finalising tomorrow.
