Why does my Monaro LS1 sound different to my TransAm LS1?

If it was 280bhp, then Id say it wasnt an LS1.

Did it have a coil per cylinder and plastic intake manifold? Equally spaced exahust ports?
Otherwise the main reason is that the firing order changed from the old engine to the lsx series.

Big difference between an 89 engine and a 98 engine, huge in fact.

Sorry lads, I don't think it was an LS1 or a LT1 either, I believe the LT1 (later reverse cooling) didn't arrive until the '92 Corvette. I think it then was put in the F bodies for the new '93 models. Both earlier small block and LT1 have same firing order, both different to LS1, hence different sound.

That's a gorgeous example there.
the generation 3 engine you have now was introduced in 1997 as a regular prodution order (rpo)Ls1 engine gen III. unlike your gta this engine has thousands of changes,alloy block,fuel injection,different firing order etc etc. you will never get it to sound like an old chevy motor even if you took the exhaust off.
