Possible thermostat problem?

Hi, I'm after some opinion on the following problem which occured whilst leaving the ferry on the way back from Le Mans:
Car fine throughout trip, including a long wait in the queue for a peage on the way back. Temp hangs around 88-90 under fan control.
Get off the ferry at Portsmouth - massive queue for customs control, car hit 90, no fan, car hits 98 still no fans (the 2nd one should have kicked in by now). Then steam, then water boiling out of blue reservoir cap.
Restart later and drive it 5 miles to Fareham (home) - the temp is back down to 85 on the move but the heater is seriously hot. Left the car for a week.
Yesterday tried this simple test; checked fans fuses etc. - OK. Neither fan kicks in when expected. Expansion tank is pressurised but COLD. Didin't check the top/bottom hoses. No weird water pump noises.
What's happened? Thermostat shut? Why is the expansion tank cold 'at temperature' yet the thing boiled over last week? Why aren't the fans kicking in when expected?
Any ideas will be greatly appreciated!

Not sure it is the same on all engines/cars, but one mine there are two bleed points, on the two metal pipes joining the hoses leading to/from the radiator.

Similar problem with my T350. No of my fans is working. I had a few "Water sensor warnings" in the display and cleaned the sensor. Both fuses in the fuse box are ok. I lifted the car with a jack and heart several bubbles, maybe air in the system. I could not find these bleeding screws, maybe it because a have a very early model. I will bring the car on the road the next days in give you a follow up.

Swap one for the rear window heater or similar. You'll hear it click if it works; I've an update on mine, it seems purely an electrical issue in that the fans just don't kick in. Rad is hot, expansion tank is hot so the pump and the thermostat are working. The temperature sensor seems to be sending the right signal to the ECU to display (I think).
Fuses are OK, relays tested OK. It seems that the relays never get activated. I even tried resetting the ECU.
Given that the dash displays the temperature (it boils over about 100 degs) the signal to the relays does not occur.
What can this be - ECU or possibly sensor? Is there another sensor dedicated to the fan control?

I'm pretty sure that there are 2 sensors, one for the dash POD and one that feeds back to control when the fans kick in. One is under the airbox, I think - not sure about the other.EnjyBenjy said:
They're both under the airbox. The left-hand sensor is for the fans I believe, the right-hand for the dash pod. Currently investigating the LH one's integrity as a possible cause...
