please don't worry about it being a long reply! the longer the better!! it's difficult to find people with objective and considered opinions about this! It's great to hear what you think, especially as you've driven them both (and lots of comparable others too).
now re that list:
968 Club Sport -- Definate possibility
M Coupe -- could have sworn I said no bmw
NSX -- for that money, surely a wreck!?
Elise -- am seriously considering a VX
S2000 -- felt like a bathtub to sit in
S15 -- Definate possibility
RX7 -- the obvious
would obviously LOVE an FD, but can't afford the fuel bills, and would be worrying myself grey at a vast rate of knots about that engine! (possibly needlessly, I know).
It's really between a....
968CS/Sport, but a bit worried about parts costs, and the fact that ones with <60k are rare as rocking-horse poo
VX220 NA, awesome, but would like something with a bit more room for luggage/passenger space for some continent bashing etc
S15 SpecR, winning at the moment but still not sure...

edited to ad: there's a whiteline article about on the web somewhere (they make all sorts of suspension kit) that says the LSD in the S15 makes a massive difference to how it drives.. is the diff on the S14 open? or is it just a crap one? also, do you know if the S15 is stiffer sprung/tighter damped? presume the SpecR is, but no actual info anywhere I can find..

The S14 has Viscous LSD, but it just doesnt work very well. S15 Diff is Helical. Dont know what the suspension is like. I still imagine its pretty soft if standard really.
My own list isnt perfect, heres my thoughts on the stuff (not having driven any of them).
968 Club Sport - (seems a bit underpwowered, but have looked good on track so might be ok, and I do like the look)
M Coupe - (BMW / Vanos. At least there are only M versions so it wont look like all the others)
NSX - (Low ned of market so not able to get a good one)
Elise - (Probably only afford a slow one. Practicality)
S2000 - (Wasnt keen, until seeing one the other night which kept up well lol)
I think it depends what you want it to do.
At the moment I want to carry on with the drift thing so am sticking to the S14. Cheap and parts available easily. If I wasnt going to smack it up Id be considering the above seriously though, including the S15 (Spec R Aero) if I could find a nice one.

If you are after a £5k jap car, and want turbo power and great looks, there is only one coice, and its here

You'd even get some change out of your £5k to spend on an EBC and you should be well on your way toward 300bhp, and lots of fun.
An MR2 Turbo with the same tuning will always be faster in a straight line, but in the tiwsty stuff, (with more than 1 passenger as well) the GT4 will win.
You know it makes sense.

Hmmm. I've chased my mates modified MR2 tubby, and while on the straight bits it inches away, the Four gobbles all of that back on the brakes and can get on the power earlier and safer in the turns.
I suspect the Two is faster ultimately on a track with a good pilot. On real roads with normal drivers I think the Four is at least as quick, if not a bit faster simply due to the confidence boost of it not trying to actively kill you.....

I'm a bit late to this thread, but if you're thinking of pork, go for a late 944 turbo instead of a 968. Very, very nice ones should be no more than £10k, leaving £5k for insurance and tuning Well over 300BHP is cheaply and reliably attainable. And the handling is sublime.
If your budget is £5k, this gets you a very tasty n/a 944, with the same sublime handling. The 16v 'S' has 190BHP and RWD, which is plenty to be getting on with
