Check that you haven't wired your Starcom into the HT lead wink

Clutching at straws here but did you connect up the choke cable when you changed the carbs, and if so could there be something funny going on that's causing it to pull the choke out?

It's possible, I doubt it though because if the cable was tight, it'd get better/worse depending on the angle of the handle bars.

All this talk of fuelling/carb issues but in my utterly incompetent mechanical mind I'd ALWAYS first check electrical issues for an engine that doesn't seem to want to rev or pull under load.

Maybe Fleegle's CDI suggestion is getting close to the problem.
