I have a 2001 LC 1.8t and im looking for advice, recently I have noticed that the car is not boosting properly, lack of power when I put the foot down! I have an hks dumpy and can be driving along normally and then ar will just dump randomly and loose power etc. the car is also using a good bit of water so I am fearing the worst ! Any suggestions?

Junk the dump valve as the first port of call. The 1.8T engine are all recirculating/diverter type valves with MAF meters so using an atmospheric dump valve messes up the fuelling unless they're running a MAP sensor in lieu of the MAF. Fit an OEM diverter valve of the latest revision and see if that makes any difference.
If not, then next you need to check all the boost pipework for leaks or splits. Then replace the N75 valve.

What's it worth vs the likely bills to fix? Assuming you have a mix of headgasket and/or turbo related problems, plus an aftermarket dump valve which from memory will throw a fault code unless remapped, suggesting it's probably not stock...could be a few issues.
There's too many likely issues to diagnose over the www - but the first step to rule out turbos issues is swap it back to standard wastegate valve to rule that out. If it still does it then the mechanical wastegate actuator could be faulty so it's overboosting - a plug in boost guage test will show this up too. Depending on mileage/condition/tune the turbo may need a rebuild so that'll be several hundred, plus removal and fitting.
Assuming that resolves the boosting problem you may or may not have head gasket failure. If there's no symptoms of water getting into the oil or the reverse then it could be the radiator(s)/pipework/heater matrix leaking.
This is all IMHO and not based on working in the trade - one of the regulars may pipe in with more reasoned experience but in the meantime a bit more info on symptoms and mileage etc may help

As said go to VW and purchase a new 710n DV. Sell the current one on the evilbay and I'm sure you will make your money back. Also would be worth getting a few meters of vacuum hose off said bay and replace all hoses.
Do you have enough coolant mixed with water. It has been getting cold recently. A weak mix could have done damage in the current deep freezes. Or could just be a leak. Get it up to temp, check for leaks and for the fan kicking in.
If you are really concerned I would get a garage to check. Should only be a few pounds and they will diagnose the worst within minutes.
Robust Lumps the 1.8t. Mine is on 110k and runs like a dream.
