throttle hunting at steady speed

Hi I'm new to this forum - looking to buy my first TVR (griffith) this summer.
I took a test drive in a 95 5.0 at the weekend. Good low mileage at 20K and seemed well cared for.
The only problem was trying to hold a steady 2500 - 3000 rpm in a low gear (2nd or 3rd). This started the engine hunting - the revs just repeatedly rising and lowering despite me holding the throttle steady.
I appreciate this is a tuned engine with a tendancy to run away at the slightest opportunity but is this behaviour normal for the rover lump ?
I'd appreciate any experience
