I have Handbrake and see there is an ipad output setting that seems to resise the film to it.
.mp4 is the advisable format, (well, H.264), as it decoded in the hardware, rather than software. I use the apple TV preset. Plays perfectly fine on the TV and the iPad. You don't even need to load them into iTunes if you use an app called Airvideo. It will just stream from wherever they are, even over the internetwebs. You, you tell it what folders to look in, (it is recursive), and you can watch whatever format. If it is .avi, .mkv, etc, you can play with live conversion, (so all the hard work is done off your device), And if you choose to convert, you can do it from the app, and once converted, add it directly to iTunes if you want, which can all be done remotely, so things are done when you get home.

A friend of mine queued up for a new iPhone 4 at bluewater on launch day. She said it was great fun! She's not a geek, just simply decided to embrace it. However, she said there were some properly extreme chaps there. One guy watching the key note speech (Jobs at the time, I think) on his iPad 1 over and over again, getting more and more excited.
