I've been able to set up our iPhones and iPads to access our squirrelmail email accounts and we can receive / read our inbox but we cannot send emails from them. We are able to use safari to log into the emails and reply that way which provides a temporary solution but we would prefer a simpler permanent one.

To do this I filled out the fields with the correct details in the format below for IMAP :

Incoming Mail Server:
HOST NAME = mail.domain.com
USER NAME = user@domain.com
PASSWORD = 12345

Outgoing Mail Server:
HOST NAME = mail.domain.com
USER NAME = user@domain.com
PASSWORD = 12345

Any others done this so that it is fully functioning? If so can you share?

Check with your mail server provider as to what ports to use. They may use non-standard ports

It's hosted through Register1 and I have spoken to them to get the details but for some reason they still won't send.

Maybe you need to enable authentication for outgoing server?

Are you trying to send via wifi or by the mobile network? Some mobile networks (like o2) block outgoing email connections to anywhere other than their own server. Cunningly they don't allow emails to send via their servers from wifi links - so you have to configure two outgoing servers - your own and o2 and let it fail on one or the other...

...brilliant system. (Caveat - it's a while since I looked at this so it may not be the same now)

I have aol accounts set up from my phone and iPad and these are fine at sending and receiving; although initially neither of them wanted to send either but I did something in the settings that resolved it- but that was over a year ago and I can't remember the process!

It should be in the Advanced Settings under Outgoing server. If I remember correctly on the iPhone it gives you a list of authentication types and you need to choose "Password".

I've ended up going into settings / mail,contacts,calendar then into my account, then go into the outgoing mail server SMTP And turning off the Primary Server, then add a new server and only put in the mail.domain.com without filling in the user name or password. Hey presto it now works!
