I also use my Apple TV (Third Gen) to stream music from iTunes on a MacBook Pro to a NAD separates system.
I use the 'Optical Out' connector on the Apple TV and a Fiio DAC to convert the audio signal to RCA for the hifi amp.
I'd like a new Apple TV, but it doesn't have an 'Optical Out' connector.
Not sure about the quality of the HDMI/Audio splitters.
Anyone have another way to steam music to a hifi, without having the TV set turned on?

Get an airport express. In the Apple TV menu - at least there is on my 3rd gen- an option to permanently AirPlay the audio output from the Apple TV. Works very well - I can AirPlay a movie from my Mac to the Apple TV. Picture plays correctly and the audio is then played through the amp input I have wired the express into.

You should still be able to 'Push' Amazon Prime steaming from the app on your iPhone, to the Apple TV though.
