E sim for abroad

Probably overthinking this but can anyone recommend an e-sim for abroad (Turkey) for data use while i'm out there on holiday? preferably one that is extremely easy to setup with no risk of your card being charged for hidden extras, going over etc.

Also can i leave my 2 physical sims in my phone and disable one for the e-sim to kick in? or do i have to remove 1 of them?

Finally is it as simple as just setting data usage to the e-sim and everything else to my main sim so i can still receive calls/texts as usual?
