Linux Easy Mode

Recently I got an Asus EEE, which continues to impress me.

This is my first Linux experience, although many years ago I did use Solaris Unix.

I'd like to put a free version of Linux on an older laptop for the wife to use for Internet / Email etc.

Do any free Linux distributions have an "easy mode" like the version of Xandros shipped with the Asus EEE as my wife really likes the simplicity of the interface.
