We're off for a long weekend to the MotoGP and staying in the town centre -- we'll have a car too. Basically, we'd love to sample a variety of paella and other local cuisine. Suggestions welcomed (and any other hints and tips).
The goto place for Paella in Valencia is La Pepica - it's at the beach though. Sunday lunchtime is the time go - book a table for around 2pm.omniflow said:

Also lots of great food - You will love it, it’s a great place
If you want somewhere menorable then my suggestion is https://www.canallabistro.com/en/
Its owned by a local Michelin starred chef and I guess it is where he trains his staff and the pallates of his future customers. It is a fun place to eat and relatively inexpensive.
Not suitable if you only want pints and paella.

For fear of receiving an obvious response, why? From what I've read, traffic is organised well on race days.
I have been several times and the traffic is far from organised, especially on race day. You will have to leave the city centre at 4am to have any chance to see any of the races.Malcolm E Boo said:

I have never had so many people ask me 'any chance of a pass for Valencia'. People who wouldn't normally consider it. Rossi's last outing will be a busy one!
The train is a good idea for the city anyway, let alone the circuit. Valencia is a brilliant city, but traffic and parking makes using the metro the easier choice. You'll love the weekend, great circuit, great city

I may have to consider the train, in that case! Thankfully, I'm staying in the city centre so it should be easy.
The train form the main station will make it a doddle. You can buy all three days train tickets in advance.
If you're staying in the centre, this place is fantastic for a spot of lunch/tapas. located in the Mercado Central - https://ricardcamarena.com/en/restaurant/central-b...
