Insuring a car for a short period of time, 2 named drivers

I think I've bought an MR2 Roadster ( if it all goes well tomorrow ) with a mate. Basically, it's simply to use on what used to be ( before covid ) an annual high speed pilgrimage around Scotland, because I'm starting to get a bit precious about my Evo and the costs when I take that are always eye watering.
Sadly, I may not get to go on this trip at all as I will possibly have to attend a funeral several hundred miles away. However, the assumption is currently that I will be going and both of us will drive if so. The plan is to use it for the trip, get it as mechanically and aesthetically as nice as possible afterwards, and part with it. Never done this before, so wondering what's the best way of insuring the thing for what might end up being a few months of ownership for the two of us?
