Big RWD Coupes
Mk2 Supra, think Japanese Capri, cool, old school RWD coupe, should leave plenty of change from your budget. Or maybe a Starion, but they tend to be pricier and more worn out for the same age. There is also the Z31 300ZX Turbo, though maybe a Z32 NA 300ZX could fit the budget and be a better choice. Might be able to find a dodgy Soarer round that price as well.
Hot Hatches
Civics and CRXs are fun small and sporty, shouldn't lose any value either. Alternatives include the Nissan Almera GTi, Mazda MX6 and 323F, Daihatsu Charade GTti or DeTomaso, Mitsubishi Mirage Cyborg R, Suzuki Swift GTi or Toyota Corolla GTi.
Front wheels drive coupes
Prelude is a good choice for these categories, solid as a rock, fun to drive, enough poke. Toyota Celica, Mazda MX6, Toyota Levin GTZ or Mitsubishi FTO are similar alternatives.
AWD Turbos
Older Toyota Celica GT4 might scrape into that budget, as might a Mazda 323 GTX, Lancer GSR, or Pulsar GTiR, even a Bluebird SSS, but they would all be pretty dodgy for under £2K.

Nobody has mentioned the 200sx yet... £2k would buy you a reasonable example with some tasty upgrades which would probably be capable of seeing off anything else that has been listed here.

Second vote for the GTti, parts are getting rarer tho.
EG6 Civic VTi's are great too, had one with a quaife diff, exhaust etc and it went really well, easily pulled to the top of fourth gear, would have been something else with forced induction of some sort.
