I need a diet/meal regime

I've got an Indian chef at the moment who cooks me my meals, which I put up with to start with but now the 'little things' about them annoy me - he likes using loads of oil, herbs, garlic, salt and spices - and when I tell him not to - he does, for a week or so then slowly starts them up again. I don't mind a little bit - but Indians seem unable to comprehend that I want my chicken to taste like chicken, or potatoes like potatoes.
As an interim measure, I bought him a Jamie Oliver cookbook - but he said that lots of the stuff in there he can't get in the local supermarket.
So, what I need are some real back to basics meals, healthy but not bland/boring, that I can tell him to cook on a rotation basis.

I take it you must be in Asia somehere . . . what sort of cuisine/cooking style were you expecting??
If you're not in Asia I would suggest either cooking your own meals or developing the ability to tell your chef what style of cuisine you like to eat.
If he can't cook what you like and nor can you, get another bloody chef or eat out!!!!!

Forget Jamie Oliver, he only only knows one oil and that is olive oil.
What about lard, or dripping or butter or goose fat etc etc.
He's too Italian for my liking, Gary Rhodes knocks him into a cocked hat when it comes to proper English cooking, Jamie is just fluff with a hint of parmesan.

I've had a few curries - not a fan of the 'authentic' ones, due to the poor quality of the meat. Indian cuts seem to involve getting a whole animal and hitting it repeatedly with a meat cleaver. All the pieces are then put in the curry. The result - bone curry, lovely.
I told him to use decent meat, as I'm not Indian, and don't like bone. But again, he forgets. Thinking about it, the problem seems to be that he forgets/doesn't care what I tell him. Words in the morning I reckon!
Now, next problem - how to get my housekeeper to iron the creases properly in my trousers...

Good lord Matthew, what has become of you!?!?!?
Sounds like you need to buy a new chef, or need to learn to cook for yourself. Have you considered going mental (Basil Fawlty style) when he does something wrong?
Buy english cooking books (Garry Rhodes or Delia as mentioned). If he serves up something that isn't in the book, hit him with the book.
