Pie

I made an awesome pie last night (sorry no pics) !!

Beef, Ale & Stilton......delicious, simple to make (bought the puff pastry )

Recipe off the BBC website (hairy bikers recipe)

Marinade beef in ale (400ml), crushed garlic, thyme & peppercorns overnight

Strain and dry beef (put liquid away)

Dip in flour & brown off

Fry shallots & mushrooms

Add liquor, beef and 500ml beef stock (i used a beef stock pot)
Simmer for 1hr 30mins

Add stilton to taste

Cook pastry & serve......delicious, very easy to make, served with mash & broccoli.

Perfect for an autumn evening !!

Definately autumn. I've just finished a casserole that I've had in the oven since 6.

Thats fine no sane person attempts to make their own puff pastry. Its just not worth the faff.

Was it a fully enclosed pie? If not,

However, it does sound like you made a wonderful casserole with a lid!
