What seems to be happening is (at least partly) a lack of realistic self-centering effect, whether its in its steering/suspension kinematics model or in the force feedback I'm not sure. It lets opposite lock wind on fairly naturally when you put the car into a slide and relax your grip, but to avoid a massive overcorrection snap the other way you have to actively force it against the feedback to take the lock off and straighten it out - with strong enough resistance that it rocks my whole (admittedly flimsy) computer desk from side to side.
Any suggestions for making it behave better? I've had a few satisfying sessions which make me want to stick with it, but more often its just frustrating.
I've tried reducing the overall FF force a little from the steam recommended settings I started with, that lightened the resistance to initial turn-in but didn't seem to change the resistance to straightening from opposite lock as far as I noticed.

Exactly same as you, on oversteer I'm either too slow getting the lock on and just spin, or I unwind too late and snap the other way, and the window for getting it right feels unfeasibly tiny. I'd also add that, with the wheel on 900 degree mode, the steering feels very, very slow all the time. It makes the car very unresponsive and like an old truck.
That's not a problem with the wheel, I've had years of driving GT games and Forza games with 900degree wheels, and a real car obviously
I'd love to know what decent settings look like because so many people love the handling model on this game, but it really isn't gelling for me and I've given up on it.
Hmm.. I can't help, but just for the record I have a G27 and find AC fine - no problems. I'm running the standard AC template for the G27. Sure, the steering feel is not as good as a real car and therefore the cars are a bit harder to drive, but I certainly find AC nicer to drive than the other sims I've tried.

I'll post my G27 settings up when i get chance, I love skidding around in this game. The E92 M3 is a good car to start with, once you get to stuff like the 488 its a challenge but it's so rewarding.
The Lotus 49 is one of my favourite cars for normal fast driving, but I must say, if you like sliding around it's fantastic - very little grip and oodles of power from an engine about 20 years ahead of its time. Pretty forgiving too.Allegro Corsa on YT has a series of AC videos showcasing 5 cars and 5 tracks each,with d/l links and lots of footage. Up to 80 odd so far.
Also having a nightmare with Content Manager, is there a place to change button binding of XBox controller? Set shifting to Auto? And the sky box is a red banner saying "upgrade to version 1.something" Any suggestions?
