Another circuit to consider (it's a bh) is Monaco/Azure Circuit. Nothing quick though because steering lock is an issue...how about Sierra RS500 or one of the other Group A cars (Merc 190 or M3 that we're doing now I think), or maybe a road car?

Stick with the V8 it's quite a long track so a bit of poke is good

Cadwell short version is Woodland Circuit I think, tricky hairpin and twisty stuff makes the hair stand on end
