Hi,

I am making a custom dash plate and looking to get 3 - 52mm & 2 - 80mm holes cut in alloy does anyone know where in the South Gloucestershire area I can get this done ?

Do it yourself. Buy a couple of holesaws and an arbour.

Where abouts in the south west are you??
There is a small engineering place in Yate that would be able to do that.

You could try Herbert Phillips in Toddington? They're waterjet cutting specialists and AFAIK they do one-off bits.
I think they were the ones a mate of mine used to get some custom PC case parts cut.
